A spooky Halloween-themed veggie tray with a creamy homemade ranch dip that turns simple vegetables into a party centerpiece. Perfect for last-minute gatherings, this crowd-pleaser comes together in under 25 minutes and gets kids excited about eating their vegetables.

  • 1 pound baby carrots (about 450g)
  • 45 large celery stalks, cut into 3-inch pieces
  • 2 medium broccoli crowns, cut into florets
  • 1 pint cherry tomatoes (about 300g), multicolored preferred
  • 1 large English cucumber, sliced into 1/4-inch rounds
  • 1 large bell pepper (any color), cut into strips
  • 1 small cauliflower head, cut into florets
  • 1 bunch radishes, trimmed and halved (optional)
  • 1 cup full-fat buttermilk (240ml)
  • 1 cup sour cream (240g), full-fat preferred
  • 1/2 cup mayonnaise (120g), Duke’s or Hellmann’s recommended
  • 2 tablespoons fresh dill, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons fresh chives, snipped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon black pepper, freshly ground
  • 1 tablespoon lemon juice, freshly squeezed

Instructions

  1. Make the ranch dip first: In a small mixing bowl, combine 1 cup buttermilk, 1 cup sour cream, and 1/2 cup mayonnaise. Whisk until smooth and creamy.
  2. Add fresh dill, parsley, chives, garlic powder, onion powder, 1/2 teaspoon kosher salt, 1/4 teaspoon black pepper, and 1 tablespoon lemon juice. Whisk until evenly distributed. Taste and adjust salt or pepper if needed. Cover and refrigerate for at least 30 minutes (or up to 3 days).
  3. Wash and prep all vegetables: Rinse everything under cold water and pat dry thoroughly with clean kitchen towels or paper towels.
  4. Cut broccoli and cauliflower into bite-sized florets, about 1-2 inches across. Peel tough outer layer of stems and slice into sticks.
  5. Slice cucumber into 1/4-inch thick rounds. For bell pepper, slice off top and bottom, remove seeds and white pith, then cut into 1-inch wide strips.
  6. Cut celery: Trim ends, then cut each stalk crosswise into 3-inch pieces. If stalks are wide, slice lengthwise once to make thinner sticks.
  7. Prepare cherry tomatoes and radishes: Leave cherry tomatoes whole. Trim radish root and a tiny bit off top, then halve or quarter if large.
  8. Assemble the Monster Mash tray: Place serving bowl in center of platter for the ‘monster’s lair.’ Fill with chilled ranch dip. Arrange vegetables around bowl, starting with larger items (broccoli, cauliflower) to create structure, then fill gaps with carrots, celery, and cucumber. Scatter cherry tomatoes and radishes around like monster eyes. Create ‘paths’ of bell pepper strips leading toward dip bowl.
  9. Add spooky touches: Use extra celery sticks to create ‘fingers’ reaching toward dip. Arrange broccoli florets like trees surrounding a swamp. Optionally cut bell pepper into a jack-o-lantern face and place on edge of tray.
  10. Serve immediately or refrigerate: If not serving right away, cover tray tightly with plastic wrap and refrigerate for up to 4 hours. Remove from fridge 15 minutes before serving to take the chill off.

Notes

Cut vegetables no more than 4 hours before serving for best crispness. For extra flavor, blanch broccoli and cauliflower in boiling salted water for 60 seconds, then transfer to an ice bath. The ranch dip needs at least 30 minutes chilling for flavors to meld. Keep vegetables refrigerated until last minute for maximum crunch. Use a heavy-bottomed bowl for dip to prevent tipping. Leftover vegetables can be stored in airtight container for up to 3 days; dip keeps for up to 5 days in sealed container. Do not store dip with vegetables.
