  • 1 bone-in, skin-on turkey breast (about 2 to 2.5 pounds)
  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh sage, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup chicken or turkey broth
  • 1 small onion, quartered (optional)
  • 2 sprigs fresh rosemary and thyme (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the middle of the oven. While it’s heating, take your turkey breast out of the fridge and let it sit at room temperature for about 20 minutes.
  2. Make the herb butter. In a small bowl, combine the softened butter, minced garlic, chopped rosemary, thyme, sage, salt, and pepper. Mash it all together with a fork until evenly distributed.
  3. Prepare the turkey breast. Pat the turkey breast completely dry with paper towels. Place it skin-side up on your cutting board. Using your fingers, gently loosen the skin from the meat, creating a pocket between the skin and the meat.
  4. Apply the herb butter. Take about half of the herb butter and spread it directly onto the meat under the loosened skin. Then, spread the remaining butter all over the outside of the turkey breast, including the underside.
  5. Season the outside. Drizzle the olive oil over the skin and rub it in. Sprinkle a little extra salt and pepper on top if desired.
  6. Set up the roasting pan. Pour the chicken broth into the bottom of your roasting pan. Add the quartered onion if using. Place a small rack in the pan if available, or place the turkey directly in the pan.
  7. Roast the turkey breast. Place the turkey breast in the preheated oven. Roast for about 50 to 60 minutes, or until the internal temperature reaches 155°F (68°C) when inserted into the thickest part of the breast. Start checking at the 45-minute mark.
  8. Baste if desired. About halfway through cooking, baste the turkey with the pan juices once or twice.
  9. Check for doneness. The skin should be deep golden brown and crispy. The juices should run clear when you pierce the thickest part.
  10. Rest the turkey. Once done, remove from oven and transfer to a cutting board. Tent loosely with aluminum foil. Let rest for at least 10 to 15 minutes.
  11. Carve and serve. After resting, carve the turkey breast against the grain into thick slices. Spoon any pan juices over the top.

Notes

Don’t skip the resting step—it ensures juicy meat. Pat the skin dry for crispy skin. Use room temperature butter for easy spreading. If skin browns too quickly, tent with foil for the last 15 minutes. Fresh herbs are preferred but dried can be substituted (use 1 teaspoon dried for each tablespoon fresh).
