These bacon-wrapped jalapeno poppers are the perfect combination of creamy, spicy, smoky, and salty. With a few simple techniques, you’ll get crispy bacon and tender jalapenos every time, making them an irresistible appetizer for any gathering.

  • 1215 fresh jalapeno peppers, medium
  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1215 slices thin-cut bacon
  • 2 tablespoons chopped fresh chives or green onions (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the middle of the oven. Line a baking sheet with parchment paper or aluminum foil, and place a wire rack on top if using.
  2. Put on disposable gloves. Cut each jalapeno in half lengthwise. Using a small spoon, scrape out the seeds and white membranes. For milder poppers, remove all membranes; for more heat, leave some in. Set the hollowed-out halves aside.
  3. In a small mixing bowl, combine the softened cream cheese, shredded cheddar cheese, garlic powder, smoked paprika, salt, and black pepper. Mix until evenly combined. Taste and adjust seasoning if needed.
  4. Using a small spoon or your fingers (gloves still on), fill each jalapeno half with the cream cheese mixture. Do not overstuff—the filling should be level with the cut edge of the pepper. A heaping teaspoon per half is usually perfect.
  5. Take a slice of bacon and wrap it around each stuffed jalapeno half. Start at one end and wrap diagonally, overlapping slightly, until the entire pepper is covered. The bacon should be snug but not tight enough to squeeze out the filling. If the bacon is too long, trim the excess.
  6. Place the wrapped poppers on the wire rack (or directly on the lined baking sheet) with the seam side down. Leave a little space between each popper for air circulation.
  7. Bake for 20-25 minutes, until the bacon is crispy and golden brown and the jalapenos are tender but still hold their shape. If not using a wire rack, flip the poppers halfway through baking.
  8. Optional: If the bacon isn’t as crispy as desired, switch the oven to broil and cook for 1-2 minutes, watching closely to prevent burning.
  9. Remove from the oven and let cool on the rack for 5 minutes to allow the filling to set slightly.
  10. Sprinkle with chopped fresh chives or green onions if desired. Serve warm.

Pre-cook the bacon slightly (microwave for 30-45 seconds until translucent and pliable) to ensure it crisps up perfectly. Use room-temperature cream cheese for a smooth filling. Do not overstuff the jalapenos. Watch the broiler closely if using. Can be assembled up to 24 hours in advance and stored in the refrigerator.
