  • 1 bottle (750 ml) chilled prosecco or champagne (dry brut recommended)
  • 2 cups chilled apple cider (unfiltered preferred)
  • 1/4 cup apple brandy or bourbon (optional)
  • Ice cubes (optional)
  • Fresh apple slices, cinnamon sticks, or star anise for garnish

Instructions

  1. Prepare the cinnamon sugar mixture: In a small shallow dish, combine 1/4 cup granulated sugar and 1 teaspoon ground cinnamon. Whisk together with a fork until evenly mixed.
  2. Rim the glasses: Take a lemon wedge and run it around the rim of each champagne flute. Dip the rim into the cinnamon sugar mixture, rotating gently to coat evenly. Tap off any excess. Let the glasses sit for 1–2 minutes so the rim sets.
  3. Mix the cider base: In a pitcher, combine 2 cups chilled apple cider with 1/4 cup apple brandy or bourbon (if using). Stir gently.
  4. Assemble the mimosas: Fill each rimmed glass about 1/3 full with the cider mixture. Slowly top off with chilled prosecco or champagne, pouring down the side of the glass to preserve the bubbles. Leave about 1/2 inch of space at the top for garnish.
