  • 2 lbs boneless, skinless chicken breasts (about 34 breasts)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 cans (15 oz each) white beans, drained and rinsed (Great Northern or cannellini)
  • 2 cans (4 oz each) diced green chiles
  • 4 cups low-sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp dried oregano (Mexican oregano preferred)
  • 1/2 tsp cayenne pepper
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 oz cream cheese, softened
  • 1/2 cup heavy cream
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)
  • Shredded Monterey Jack cheese (for garnish)
  • Sour cream or Greek yogurt (for garnish)
  • Diced avocado (for garnish)
  • Tortilla chips or strips (for garnish)

Instructions

  1. Dice the onion and mince the garlic.
  2. Place the chicken breasts at the bottom of a 6-quart or larger slow cooker. Add the diced onion, minced garlic, drained white beans, and both cans of green chiles on top.
  3. Sprinkle the cumin, oregano, cayenne, salt, and pepper over everything. Pour the chicken broth around the edges, being careful not to wash the spices off the chicken.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is tender and shreds easily.
  5. About 30 minutes before serving, remove the chicken breasts from the slow cooker and shred with two forks. Return the shredded chicken to the slow cooker.
  6. In a small bowl, soften the cream cheese in the microwave for 15-20 seconds. Stir in the heavy cream and lime juice until smooth.
  7. Pour the cream cheese mixture into the slow cooker and stir gently until well combined. The chili should turn a creamy, pale yellow color. Taste and adjust salt and pepper if needed.
  8. Cover and let the chili cook on low for another 15-20 minutes to meld the flavors.
  9. Ladle into bowls and garnish with cilantro, Monterey Jack cheese, sour cream, avocado, and tortilla chips as desired.

Notes

For a dairy-free version, omit cream cheese and heavy cream and stir in a can of full-fat coconut milk at the end. For a spicier chili, add 1-2 diced jalapeños or use hot green chiles. This chili can be made ahead and refrigerated for up to 4 days; flavors improve overnight. To freeze, leave out the cream cheese and heavy cream and add them when reheating.
