  • 2 lbs ground beef (80/20 ground chuck)
  • 1 cup breadcrumbs (plain or panko)
  • 2 large eggs
  • 1/2 cup milk (whole or 2%)
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1/3 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 cup brown sugar, packed
  • 1/2 cup ketchup (for glaze)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce (for glaze)
  • 1/2 teaspoon garlic powder

Instructions

  1. Line the bottom of a 5-6 quart slow cooker with parchment paper or aluminum foil, leaving overhang for handles. Spray lightly with nonstick cooking spray.
  2. In a small bowl, whisk together brown sugar, 1/2 cup ketchup, apple cider vinegar, 1 teaspoon Worcestershire sauce, and garlic powder until smooth. Set aside.
  3. Heat a small skillet over medium heat with a drizzle of oil. Sauté diced onion for 3-4 minutes until translucent. Add minced garlic and cook 30 seconds more. Let cool.
  4. In a large mixing bowl, combine ground beef, breadcrumbs, eggs, milk, sautéed onion and garlic, 1/3 cup ketchup, 2 tablespoons Worcestershire sauce, Dijon mustard, salt, pepper, and dried thyme. Mix gently with your hands until just combined.
  5. Transfer meat mixture to the prepared slow cooker. Shape into a loaf, leaving about 1 inch of space around the edges.
  6. Brush half of the brown sugar glaze over the top and sides of the meatloaf. Reserve remaining glaze.
  7. Cover and cook on LOW for 5 to 6 hours. Do not lift the lid during cooking.
  8. About 30 minutes before done, brush remaining glaze over the top.
  9. Carefully lift meatloaf out using parchment handles. Transfer to a cutting board and let rest for 10 minutes before slicing into 1-inch thick pieces. Serve with extra glaze spooned over the top.

Notes

Don’t overmix the meat. Use a meat thermometer to ensure internal temperature reaches 160°F. Let the meatloaf rest for 10 minutes before slicing. Line the slow cooker for easy cleanup. Sautéing aromatics is optional but recommended for better flavor.
