  • 2 tablespoons (28g) cold unsalted butter, cubed (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides. Lightly grease the short sides.
  2. Brown the butter: Place ½ cup unsalted butter in a light-colored skillet over medium heat. Stir occasionally until it foams and turns golden with brown specks, about 3-4 minutes. Remove from heat and pour into a heatproof bowl. Let cool for 10 minutes.
  3. Mash the bananas in a large bowl until mostly smooth (about 1½ cups).
  4. To the mashed bananas, add the cooled brown butter, 2 eggs, ⅓ cup yogurt or sour cream, and 1 teaspoon vanilla extract. Whisk until smooth and glossy.
  5. In a separate medium bowl, whisk together 1½ cups flour, ¾ cup granulated sugar, ¼ cup packed brown sugar, 1 teaspoon baking soda, ½ teaspoon salt, and ½ teaspoon cinnamon.
  6. Pour the dry ingredients into the wet ingredients. Fold gently with a rubber spatula until just combined. Do not overmix.
  7. Make the streusel: In a small bowl, combine ¼ cup flour, ¼ cup packed brown sugar, ½ cup chopped walnuts, and ¼ teaspoon cinnamon. Add 2 tablespoons cold cubed butter. Use a pastry cutter, fork, or fingers to work the butter into the dry mixture until it resembles coarse sand with some pea-sized butter pieces.
  8. Pour the batter into the prepared loaf pan and spread evenly. Sprinkle the streusel over the top, pressing gently into the batter.
  9. Bake on the middle rack for 50-60 minutes. If the streusel browns too quickly, tent with foil at the 40-minute mark. The bread is done when a toothpick inserted into the center comes out clean or with a few moist crumbs.
  10. Let the bread cool in the pan on a wire rack for 10 minutes. Then lift out using the parchment overhang and transfer to the rack to cool completely (at least 1 hour) before slicing.
