  • 2 teaspoons baking powder

  • 2 large eggs, room temperature
  • ½ cup buttermilk, room temperature
  • 4 tablespoons unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • ½ cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)
  • 4 tablespoons unsalted butter, melted (for coating)

Instructions

  1. Pour 1 cup of fresh apple cider into a medium saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer until reduced to about ¼ cup, about 15-20 minutes. Remove from heat and let cool.
  2. Preheat oven to 350°F (175°C). Lightly grease a 12-cavity donut pan with non-stick spray or melted butter.
  3. In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until evenly distributed.
  4. In a medium bowl, whisk together eggs, buttermilk, melted butter, vanilla extract, and cooled reduced apple cider until smooth.
  5. Pour wet ingredients into dry ingredients. Fold gently with a rubber spatula until just combined (about 12-15 strokes). Do not overmix; a few lumps are fine.
  6. Transfer batter to a piping bag or ziploc bag with the corner snipped off. Pipe batter into each donut cavity, filling about ⅔ full.
  7. Bake for 10-12 minutes, until golden brown and a toothpick inserted into the thickest part comes out clean. Let cool in pan for 2-3 minutes, then transfer to a cooling rack.
  8. While donuts are still warm, brush each generously with melted butter, then immediately dip into the cinnamon sugar mixture, turning to coat both sides. Repeat with remaining batter.

Don’t skip reducing the apple cider—it concentrates the flavor. Use room temperature ingredients for best texture. Overmixing leads to dense donuts.
