Instructions

  1. Make the Pimento Cheese Spread: In a medium bowl, combine shredded cheddar cheese and softened cream cheese. Blend until smooth using a hand mixer or whisk. Fold in chopped roasted red peppers, mayonnaise, Worcestershire sauce, garlic powder, and cayenne pepper. Season with salt and pepper. Chill for at least 30 minutes.
  2. Prepare Bourbon Meatballs: Preheat oven to 375°F. In a large bowl, mix ground beef, bread crumbs, beaten egg, chopped onion, and minced garlic. Shape into 1-inch meatballs and place on a baking sheet. Bake for 15-20 minutes until browned and cooked through.
  3. Make Bourbon Glaze: In a saucepan, combine bourbon, brown sugar, ketchup, and Dijon mustard. Simmer over medium heat, stirring occasionally, until thickened, about 10 minutes. Toss cooked meatballs in glaze to coat evenly.
