Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water, sugar, and active dry yeast. Stir lightly and let sit for about 5 minutes until foamy.
  2. Make the dough: Add olive oil, salt, and flour to the yeast mixture. Mix until dough pulls away from sides but is slightly sticky, adding more flour if needed.
  3. Knead the dough on a lightly floured surface for 6-8 minutes until smooth and elastic (or 5 minutes with stand mixer dough hook).
  4. First rise: Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for 45-60 minutes until doubled in size.
  5. Shape the breadsticks: Punch down dough, divide into 12 equal pieces (~2 oz each), roll each into 6-inch sticks, and place on parchment-lined baking sheet spaced 1 inch apart.
  6. Second rise: Cover loosely and let rise for 20-30 minutes until puffy.
  7. Bake: Preheat oven to 400°F (200°C). Bake breadsticks for 12-15 minutes until golden but still soft.
  8. Prepare garlic butter topping: Melt butter and stir in garlic powder and Italian seasoning.
  9. Brush breadsticks immediately after baking with garlic butter mixture and sprinkle with coarse salt if desired. Serve warm.
