  • 8 slices thick-cut bacon, cooked until crispy and chopped
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1/2 cup BBQ sauce
  • 2 tablespoons unsalted butter, melted (for brushing the tops)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat for easy cleanup.
  2. In a large bowl, whisk together 2 cups all-purpose flour, 1 tablespoon baking powder, 1 teaspoon sugar, and 1/2 teaspoon salt.
  3. Cut in 1/2 cup cold unsalted butter using a pastry cutter or fork until the mixture resembles coarse crumbs with pea-sized bits.
  4. Pour in 3/4 cup cold whole milk and gently stir with a spoon until just combined. Do not overmix.
  5. Turn dough onto a floured surface and lightly knead 3-4 times just to bring it together. Pat or roll the dough to about 1-inch thickness.
  6. Use a 2 1/2-inch round cutter to stamp out about 8 biscuits. Gather scraps and repeat as needed.
  7. In a small bowl, mix together 1 1/2 cups shredded sharp cheddar cheese, 8 slices crispy chopped bacon, and 1/2 cup BBQ sauce until evenly coated.
  8. Split each biscuit in half horizontally. Place the bottom halves on the baking sheet.
  9. Spoon a generous amount of the BBQ bacon cheddar filling onto each bottom half, then top with the biscuit tops.
  10. Brush the tops of the assembled biscuits with 2 tablespoons melted butter.
  11. Bake for 12-15 minutes, or until biscuits are puffed and golden brown.
  12. Let the melts rest for 5 minutes on the baking sheet before serving.

Notes

Keep butter cold to ensure flaky biscuits. Do not overmix dough to avoid tough biscuits. Thin BBQ sauce with a teaspoon of water if too thick. Let melts rest after baking to set cheese. Cook bacon while prepping dough to save time.
