A crisp and invigorating summer drink combining fresh cucumber, a gentle kick of jalapeño, lime, and sparkling water for a refreshing and lightly spicy beverage.

Ingredients

Scale
  • 2 medium cucumbers, peeled and roughly chopped (preferably English cucumbers)
  • 1 small jalapeño pepper, thinly sliced (seeds removed for less heat)
  • 2 tablespoons fresh lime juice (about 1 large lime)
  • 2 tablespoons sweetener (agave syrup, honey, or simple syrup)
  • 4 cups sparkling water, chilled (plain or lime-flavored)
  • A handful of fresh mint leaves (optional, for garnish)
  • Ice cubes, as needed for serving

Instructions

  1. Peel and roughly chop the cucumbers into chunks. Thinly slice the jalapeño, removing seeds if you want a milder flavor.
  2. Place the cucumber chunks and jalapeño slices in a blender. Add the fresh lime juice and sweetener. Blend on high until smooth and well combined, about 1 to 2 minutes.
  3. Pour the blended mixture through a fine mesh sieve or cheesecloth into a pitcher. Use the back of a spoon to press the pulp and extract as much liquid as possible. Discard solids.
  4. Add the chilled sparkling water to the strained juice. Stir gently to combine without losing too much fizz. Taste and adjust sweetness if needed.
  5. Fill glasses with ice cubes and pour the agua fresca over. Garnish with fresh mint leaves and a thin slice of jalapeño or cucumber.

Notes

Start with a small amount of jalapeño and add more to control heat. Use fresh English cucumbers for best flavor. Strain well to remove pulp and seeds for a smooth drink. Chill sparkling water and juice base before mixing to preserve fizz. Prepare base up to 24 hours ahead and add sparkling water just before serving.
