A quick and easy cheesy taco lasagna squares recipe perfect for Super Bowl parties and casual get-togethers. Layers of seasoned ground beef, melted cheese, and soft tortillas baked to bubbly perfection.

  • 1 lb ground beef (lean preferred)
  • 1 packet taco seasoning mix (or 2 tablespoons homemade seasoning)
  • 1/2 cup water
  • 1/2 cup salsa
  • 2 cups shredded cheddar cheese (sharp preferred)
  • 1 cup shredded Monterey Jack cheese
  • 1 cup ricotta cheese
  • 8 small flour tortillas (6-inch, soft taco size)
  • 1/4 cup chopped fresh cilantro (optional, for garnish)
  • 1/4 cup sour cream (for serving)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish with butter or cooking spray.
  2. In a large skillet over medium heat, cook ground beef until browned and no longer pink, about 7-8 minutes. Drain excess fat if necessary.
  3. Add taco seasoning and 1/2 cup water to the beef. Stir and simmer for 3-4 minutes until thickened. Stir in salsa and remove from heat.
  4. In a mixing bowl, combine ricotta cheese with shredded Monterey Jack cheese and stir until smooth.
  5. Place one tortilla at the bottom of the baking dish. Spread one-third of the beef mixture evenly over the tortilla. Dollop and spread half of the ricotta-cheese mixture over the beef. Sprinkle one-third of the shredded cheddar cheese on top.
  6. Repeat layering with second tortilla, remaining beef mixture, remaining ricotta mixture, and another third of cheddar cheese.
  7. Finish with the last tortilla on top and sprinkle the remaining cheddar cheese evenly over the surface.
  8. Bake in preheated oven for 20-25 minutes until cheese is bubbly and golden brown and edges of tortillas are slightly crispy.
  9. Let the lasagna squares rest for 5-10 minutes after baking to set.
  10. Garnish with chopped fresh cilantro and serve with a dollop of sour cream. Best enjoyed warm.

Notes

Use lean ground beef to reduce grease. For gluten-free, substitute flour tortillas with corn or gluten-free wraps. For dairy-free, use vegan cheese and coconut-based ricotta alternatives. Tent with foil if cheese browns too fast. Let rest before slicing for clean squares.
