Perfect Ombre Strawberry Mimosa Tower

A stunning and easy-to-make layered strawberry mimosa tower that combines fresh strawberry puree and sparkling wine for a refreshing, bubbly celebration drink with a beautiful ombre effect.

Ingredients

  • 1 pound fresh strawberries, hulled (about 450 g)
  • 1/4 cup granulated sugar (50 g)
  • 2 tablespoons fresh lemon juice (30 ml)
  • 1 to 2 tablespoons orange liqueur (1530 ml, optional)
  • 1 bottle chilled sparkling wine or Champagne (750 ml)
  • Fresh strawberries for garnish (optional)

Instructions

  1. Rinse and hull the fresh strawberries. Place them in a blender or food processor with the granulated sugar and fresh lemon juice. Blend until smooth, about 30 seconds. For a seedless puree, press the mixture through a fine mesh sieve into a bowl, discarding seeds.
  2. Taste the puree and add more sugar or lemon juice if needed. Stir in orange liqueur if using. Chill the puree in the refrigerator for at least 15 minutes to thicken slightly.
  3. Chill champagne flutes or tall glasses in the fridge for about 10 minutes before assembling.
  4. Using a small ladle, spoon about 2 tablespoons (30 ml) of strawberry puree into the bottom of each glass. Tilt the glass slightly to create an even layer without splashing.
  5. Gently pour 2 ounces (60 ml) of chilled sparkling wine over the back of a spoon held just above the strawberry layer to keep layers distinct.
  6. Alternate layers of strawberry puree and sparkling wine, gradually increasing the amount of wine and decreasing the puree with each layer. Typically, 3 to 4 layers create a beautiful gradient.
  7. If making a tower, carefully stack the glasses on a serving stand or tiered tray. Garnish each glass with a thin slice of strawberry on the rim or floating on top. Serve immediately.

Notes

Pour sparkling wine slowly over the back of a spoon to keep layers distinct. Chill all ingredients and glasses well before assembling. Use ripe, firm strawberries for best flavor and color. The mimosa tower is best served immediately to maintain bubbles and ombre effect. Leftover strawberry puree can be refrigerated up to 2 days but do not store assembled mimosas.
