  • 2 ½ cups (310g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup (170g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon almond extract (optional)
  • ¼ cup (60ml) whole milk or dairy-free alternative
  • 1 cup (230g) unsalted butter, softened (for frosting)
  • 4 cups (480g) powdered sugar, sifted
  • 2 teaspoons pure vanilla extract (for frosting)
  • 23 tablespoons milk or heavy cream (for frosting)
  • Food coloring (optional)
  • Sprinkles or edible glitter (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar until light and fluffy, about 3 minutes.
  4. Beat in egg, vanilla extract, and almond extract until combined.
  5. Gradually add flour mixture to wet ingredients in three parts, alternating with milk, beginning and ending with flour. Mix until just combined.
  6. Use a cookie scoop or tablespoon to drop rounded dough balls onto baking sheets, spacing 2 inches apart.
  7. Bake for 10-12 minutes until edges start to turn golden but centers remain soft.
  8. Cool cookies completely on a wire rack before frosting.
  9. Beat softened butter until creamy. Gradually mix in powdered sugar, vanilla extract, and milk until smooth and spreadable. Adjust milk for consistency.
  10. Add food coloring if desired. Spread or pipe frosting onto cooled cookies. Decorate with sprinkles or edible glitter.
  11. Arrange frosted cookie bites on a tray. Chill for 15 minutes if frosting needs to firm up before serving.

Notes

Chill dough if too sticky before scooping. Do not frost warm cookies to prevent melting. Overmixing flour can make cookies tough. Use a cookie scoop for even sizes. Adjust milk in frosting for desired consistency. Store frosted cookies at room temperature up to 3 days or refrigerate up to a week. Freeze unfrosted cookies up to 3 months.
