  • 3 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • Zest of one fresh lemon
  • Assorted sprinkles (pastel, metallic, and classic colorful mixes)
  • Mini chocolate chips or curls
  • Edible pearls and glitter (food-safe versions only)
  • Fresh edible flowers (like pansies or violets)
  • Colorful candy pieces (mini M&Ms or jelly beans)
  • Toasted coconut flakes

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup cupcake tin with liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, beat butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, then add vanilla extract.
  5. Add dry ingredients in three parts, alternating with milk, beginning and ending with dry ingredients. Mix gently to avoid overworking.
  6. Fill cupcake liners about two-thirds full with batter.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  8. For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar, then vanilla and lemon zest. Beat until fluffy, about 3 minutes.
  9. Once cupcakes are cool, fill piping bags and swirl frosting on top.
