Ingredients

Scale
  • 1 ½ cups (150g) graham crackers or digestive biscuits, crushed
  • 6 tbsp (85g) unsalted butter, melted
  • 2 tbsp (25g) sugar
  • 8 oz (225g) softened cream cheese
  • 1 cup (240ml) Greek yogurt (full-fat or low-fat)
  • ½ cup (100g) sugar
  • 1 tsp vanilla extract
  • Zest of one lemon or lime
  • 1 tbsp (10g) powdered gelatin (optional, dissolved in 3 tbsp warm water)
  • 1 cup (150g) chopped fresh berries, mango, or peach pieces
  • Fresh mint leaves (for garnish)
  • Optional dairy-free substitutions: coconut cream, dairy-free yogurt, agar-agar instead of gelatin

Instructions

  1. Prepare the crust: Crush graham crackers or digestive biscuits into fine crumbs using a food processor or rolling pin. Mix crumbs with melted butter and sugar until the mixture holds together when pressed. Press evenly into the bottom of a pan or dessert cups. Chill for 10 minutes to set.
  2. Make the creamy filling: Beat softened cream cheese with Greek yogurt until smooth. Add sugar, vanilla extract, and citrus zest. Continue beating until fluffy and well combined. For a firmer set, gently mix in dissolved gelatin.
  3. Add fresh fruit: Fold in chopped fresh berries, mango, or peach pieces carefully to maintain texture.
  4. Assemble and chill: Spoon the filling over the chilled crust layer and smooth the top. Cover with plastic wrap and refrigerate for at least 2 hours or overnight to set.
  5. Garnish and serve: Decorate with fresh mint leaves and extra fruit slices just before serving.

Notes

Chill the crust before adding the filling to prevent sogginess. Use softened cream cheese for a smooth texture. Refrigerate for at least 2 hours to allow the dessert to set properly. For vegan versions, substitute dairy ingredients with coconut cream and use agar-agar instead of gelatin. Avoid freezing as it affects texture.
