Instructions

  1. Prepare the crust or base: Crush graham crackers or digestive biscuits until fine. Mix with melted unsalted butter and a pinch of salt. Press firmly into the bottom of serving dishes or ramekins. Chill in the fridge for at least 15 minutes to set.
  2. Make the lemon filling: In a medium bowl, combine cottage cheese, fresh lemon juice, lemon zest, honey or maple syrup, and Greek yogurt. Mix until fully combined.
  3. Whip egg whites or aquafaba: Beat egg whites with a pinch of salt until stiff peaks form (about 4–5 minutes). For aquafaba, whip similarly but it may take longer.
  4. Fold whipped whites into lemon mixture: Gently fold the beaten whites into the lemon mixture in three additions using a spatula to keep the mixture airy.
  5. Assemble and chill: Spoon the lemon filling over the chilled crust. Smooth the top, cover, and refrigerate for at least 2 hours to let flavors meld and mousse set.
  6. Serve: Garnish with fresh mint leaves, thin lemon slices, or toasted coconut flakes before serving.
