Irresistible Galentine’s Strawberry Cake Ball Board

A quick and easy recipe for moist strawberry cake balls coated in white chocolate and sprinkled with freeze-dried strawberries, perfect for parties and celebrations.

  • 1 cup fresh strawberries, pureed
  • 1/3 cup vegetable oil
  • 3 large eggs, room temperature
  • 1/2 cup water
  • 8 oz cream cheese, softened (Philadelphia recommended)
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 1 tsp vanilla extract
  • 16 oz white chocolate chips or melting wafers (Ghirardelli recommended)
  • 1/4 cup freeze-dried strawberries, crushed
  • Optional: pink sanding sugar for extra sparkle

Instructions

  1. Preheat oven to 350°F (175°C). Puree 1 cup fresh strawberries until smooth.
  2. In a large bowl, combine white cake mix, strawberry puree, vegetable oil, eggs, and water. Mix on medium speed for about 2 minutes until smooth and well combined.
  3. Pour batter into a greased 9×13-inch pan. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let cake cool completely on a wire rack (about 1 hour).
  4. While cake cools, beat softened cream cheese and butter together until smooth and fluffy (about 3 minutes). Gradually add powdered sugar and vanilla extract, mixing on low then medium speed until creamy and spreadable.
  5. Crumble cooled cake into a large bowl. Add 1 cup frosting and gently mix until mixture holds together when pressed. Form 1-inch balls using a cookie scoop or spoon and place on parchment-lined baking sheet.
  6. Refrigerate cake balls for at least 1 hour or freeze for 15-20 minutes to firm up.
  7. Melt white chocolate chips in 30-second intervals in microwave or over a double boiler until smooth.
  8. Dip each cake ball into melted white chocolate using a toothpick or fork, letting excess drip off. Place on parchment paper and immediately sprinkle with crushed freeze-dried strawberries and optional pink sanding sugar.
  9. Let cake balls set at room temperature or refrigerate until chocolate hardens (20-30 minutes). Arrange on a board or platter and serve.

Notes

Chill cake balls before dipping to keep shape intact and make dipping easier. Add frosting gradually to avoid overly sticky mixture. Melt white chocolate slowly and stir frequently to prevent burning or seizing. Sprinkle toppings while chocolate is still wet for better adhesion. Uniform cake balls look best and bake evenly.
