  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup (113g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) packed brown sugar
  • 1 large egg, room temperature
  • 4 oz (113g) cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 to teaspoons green food coloring (gel preferred)
  • 1 cup (175g) semi-sweet or milk chocolate chips
  • Optional: ½ cup (75g) chopped nuts (pecans or walnuts)
  • Optional: ¼ teaspoon mint extract

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang for easy lifting.
  2. In a large bowl, sift together flour, cocoa powder, baking powder, and salt. Whisk to combine.
  3. In a separate bowl, beat softened butter with granulated sugar and brown sugar on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in the egg, then cream cheese and vanilla extract until smooth. Stir in green food coloring until the batter is evenly colored. Add mint extract if using.
  5. Gradually add dry ingredients to wet ingredients, mixing just until combined. Fold in chocolate chips and nuts if using.
  6. Spread batter evenly into prepared pan and smooth the top.
  7. Bake for 25-30 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs. Avoid overbaking.
  8. Cool completely in the pan on a wire rack, about 1 hour. Use parchment overhang to lift bars out and cut into squares.

Use gel food coloring for vibrant color without thinning the batter. Soften butter and cream cheese to room temperature for smooth mixing. Avoid overmixing after adding flour to keep bars tender. Underbake slightly for extra chewiness. Bars keep firming up as they cool. Store in airtight container at room temperature for up to 3 days, refrigerate up to a week, or freeze up to 3 months.
