Instructions

  1. Make the flax eggs: In a small bowl, whisk together 2 tablespoons flaxseed meal with 6 tablespoons water. Let sit for about 10 minutes until thickened and gelatinous.
  2. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal.
  3. In a large bowl, sift together 1 cup all-purpose flour, 1 cup unsweetened cocoa powder, 1 teaspoon baking powder, and 1/2 teaspoon salt. Whisk briefly to combine.
  4. In another bowl, mix 1 cup granulated sugar with 1/3 cup neutral oil and 1 teaspoon vanilla extract until well combined.
  5. Stir the prepared flax eggs into the wet ingredients until fully incorporated.
  6. Gradually fold the dry ingredients into the wet mixture using a spatula. Mix until just combined; do not overmix.
  7. Fold in 1/2 cup dairy-free chocolate chips or chunks if using.
  8. Scrape the batter into the prepared pan and spread evenly with a spatula.
  9. Bake for 25–30 minutes, starting to check at 25 minutes by inserting a toothpick in the center. It should come out with moist crumbs but not wet batter.
  10. Let the brownies cool completely in the pan on a wire rack for at least 30 minutes before slicing.
