  • 1 ½ cups (300g) granulated sugar
  • ½ cup (100g) brown sugar, packed
  • 3 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (125g) all-purpose flour
  • ¾ cup (75g) unsweetened cocoa powder
  • ½ cup (120ml) Irish stout beer, room temperature
  • 1 cup (170g) bittersweet or semi-sweet chocolate chips
  • ½ teaspoon salt
  • Optional: chopped toasted walnuts or pecans, espresso powder

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9 inch pan or line with parchment paper with overhang.
  2. Melt butter gently and let cool slightly (about 5 minutes).
  3. In a large bowl, whisk granulated sugar, brown sugar, and melted butter until smooth and glossy.
  4. Add eggs one at a time, whisking well after each addition, then stir in vanilla extract.
  5. In a separate bowl, sift together flour, cocoa powder, and salt.
  6. Slowly fold dry ingredients into wet mixture until just combined.
  7. Pour in Irish stout and fold gently to combine.
  8. Fold in chocolate chips and optional nuts or espresso powder if using.
  9. Pour batter into prepared pan and smooth the top.
  10. Bake for 30-35 minutes, checking at 30 minutes with a toothpick; it should come out with moist crumbs but no wet batter.
  11. Cool completely on a wire rack before slicing.

Notes

Use room temperature eggs and stout for smooth batter. Do not overmix after adding dry ingredients to keep brownies fudgy. Check doneness at 30 minutes with toothpick test. Cooling completely is crucial for fudgy texture. For dairy-free, substitute butter with coconut oil and use dairy-free chocolate chips. Gluten-free flour blend can replace all-purpose flour for GF version.
