  • 2 tablespoons olive oil (for brushing the crust)
  • 8 oz (225g) cream cheese, softened
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon fresh parsley, chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup yellow bell pepper, thinly sliced
  • 1/2 cup fresh spinach leaves (washed and dried)
  • 1/2 cup shredded purple cabbage
  • 1/4 cup shredded carrot
  • 1/4 cup sliced black olives
  • Optional: fresh basil leaves for garnish
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 475°F (245°C). If using a pizza stone, place it on the middle rack to heat while you prep.
  2. Prepare the herbed cream cheese spread: In a mixing bowl, combine the softened cream cheese, chopped chives, parsley, garlic powder, salt, and pepper. Mix until smooth and creamy. Set aside.
  3. Roll out your pizza dough on a lightly floured surface into a roughly 12-inch circle.
  4. Transfer the dough to your preheated pizza stone or a baking sheet lined with parchment paper.
  5. Lightly brush the edges of the dough with olive oil to encourage a golden, crispy crust.
  6. Spread the herbed cream cheese evenly over the dough, leaving about a 1-inch border around the edges.
  7. Add the shredded mozzarella cheese evenly on top of the cream cheese.
  8. Arrange the rainbow veggies in stripes or sections: cherry tomatoes, yellow bell pepper, spinach leaves, shredded purple cabbage, shredded carrot, and black olives.
  9. Sprinkle the Parmesan cheese over the veggies.
  10. Bake for 12-15 minutes, or until the crust is golden and the cheese is melted and bubbly.
  11. Remove from oven and let cool for 3-5 minutes. Garnish with fresh basil if desired.
  12. Slice and serve warm.
