Ingredients

Scale
  • 1 ½ cups (190g) all-purpose flour
  • 3 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 ¼ cups (300ml) whole milk, room temperature
  • 1 large egg, room temperature
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Food coloring gel or natural color powders (red, orange, yellow, green, blue, purple)
  • Optional for serving: fresh berries or fruit slices
  • Optional for serving: maple syrup or honey
  • Optional for serving: whipped cream or yogurt

Instructions

  1. Mix dry ingredients: In a large mixing bowl, whisk together 1 ½ cups all-purpose flour, 3 ½ teaspoons baking powder, 1 teaspoon salt, and 1 tablespoon sugar.
  2. Combine wet ingredients: In a separate bowl, whisk 1 ¼ cups whole milk, 1 large egg, 3 tablespoons melted butter, and 1 teaspoon vanilla extract until smooth.
  3. Make the batter: Slowly pour the wet mixture into the dry ingredients, whisking gently until just combined. Do not overmix; lumps are okay.
  4. Divide and color the batter: Spoon the batter evenly into 6 small bowls. Add a drop or two of food coloring gels to each bowl and stir until vibrant colors form.
  5. Heat the pan: Preheat a non-stick frying pan or griddle over medium heat. Lightly grease with butter or oil.
  6. Form the pancake boats: Using a spoon or piping bag, drop dollops of each colored batter side-by-side in small circles or oval shapes on the pan, slightly overlapping to form a boat shape.
  7. Cook and flip: Cook for 2-3 minutes until bubbles form on the surface and edges look set. Gently flip and cook for another 1-2 minutes until golden and cooked through.
  8. Serve immediately: Arrange the rainbow cloud pancake boats on plates, add fresh fruit or syrup if desired, and serve warm.

Notes

Do not overmix the batter to keep pancakes fluffy. Let the batter rest for 5 minutes before cooking for extra fluffiness. Use gel food coloring to avoid thinning the batter. Cook on medium heat to prevent burning and ensure even cooking. For gluten-free, substitute flour with 1-to-1 gluten-free baking flour. For vegan, use flax egg and plant-based milk.
