  • 2 ¼ teaspoons active dry yeast (one packet)
  • ¼ cup granulated sugar (50g)
  • 1 cup whole milk, warmed to about 110°F (43°C)
  • 6 tablespoons unsalted butter, melted and cooled slightly (85g)
  • 2 large eggs, room temperature
  • 1 teaspoon salt
  • 2 tablespoons honey (for the dough)
  • ½ cup unsalted butter, softened (115g) (for cinnamon honey butter)
  • 3 tablespoons honey (for cinnamon honey butter)
  • 1 teaspoon ground cinnamon (for cinnamon honey butter)
  • ½ teaspoon vanilla extract (for cinnamon honey butter)

Instructions

  1. Activate the yeast (10 minutes): In a small bowl, combine the warm milk (about 110°F / 43°C) with the sugar and active dry yeast. Stir gently and let it sit until foamy and bubbly, about 5–10 minutes.
  2. Mix wet ingredients (5 minutes): In a large bowl or stand mixer, whisk together the melted butter, honey, eggs, and salt. Once the yeast is active, add it to this mixture and stir to combine.
  3. Add flour and knead (10–12 minutes): Gradually add about 3 ½ cups (420g) of all-purpose flour, mixing well. Knead by hand or with a dough hook on medium speed, adding flour as needed until dough is soft and slightly tacky. Knead until smooth and elastic.
  4. First rise (60–75 minutes): Shape dough into a ball, place in a greased bowl, cover with plastic wrap or damp towel, and let rise in a warm spot until doubled in size.
  5. Shape rolls (10 minutes): Punch down dough, divide into 12 equal pieces (~70g each), shape into smooth balls, and place close together in a greased 9×13-inch baking dish or lined baking sheet.
  6. Second rise (30–40 minutes): Cover rolls and let rise until puffy and nearly doubled.
  7. Preheat oven & prepare for baking (5 minutes): Preheat oven to 350°F (175°C). Brush tops of rolls with melted butter before baking.
  8. Bake (20–25 minutes): Bake rolls until golden brown and hollow sounding when tapped.
  9. Make cinnamon honey butter (while baking): Mix softened butter, honey, ground cinnamon, and vanilla extract until smooth and creamy.
  10. Brush and serve (immediately): Brush baked rolls with melted butter and serve warm with cinnamon honey butter.

Notes

Use warm milk at about 110°F to activate yeast properly. Avoid adding too much flour to keep dough slightly sticky for softer rolls. Brush rolls with melted butter before and after baking for a soft crust. Rolls can be frozen after second rise and baked from frozen with extra baking time. For dairy-free, substitute milk and butter with plant-based alternatives. For gluten-free, use a gluten-free flour blend with xanthan gum.
