  • ¼ cup (50g) granulated sugar
  • 1 packet (2 ¼ tsp / 7g) active dry yeast
  • ½ tsp salt
  • ¾ cup (180ml) warm whole milk (about 110°F / 43°C)
  • ¼ cup (57g) unsalted butter, melted and cooled slightly
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • ½ cup (100g) packed brown sugar
  • 2 tbsp ground cinnamon
  • 3 tbsp (43g) unsalted butter, softened
  • 4 oz (113g) cream cheese, softened
  • ¼ cup (30g) powdered sugar
  • 2 tbsp (30ml) milk
  • ½ tsp vanilla extract
  • Pinch of salt

Instructions

  1. Activate the yeast: In a small bowl, combine warm milk (¾ cup / 180ml, about 110°F / 43°C) with 1 tsp sugar from the recipe and sprinkle yeast over the top. Let it sit for 5-7 minutes until foamy.
  2. Mix the dough: In a large bowl, whisk together 2 ½ cups flour, ¼ cup sugar, and ½ tsp salt. Add melted butter, egg, vanilla extract, and the foamy yeast mixture. Stir until combined.
  3. Knead the dough: Knead by hand on a floured surface for 8-10 minutes or with a mixer dough hook for 5 minutes until smooth and elastic.
  4. First rise: Shape dough into a ball, place in greased bowl, cover, and let rise in a warm spot for 1 to 1 ½ hours until doubled.
  5. Prepare filling: Mix brown sugar and cinnamon in a small bowl. Set softened butter aside.
  6. Roll out dough: Punch down dough, roll into a 15×9 inch rectangle. Spread softened butter evenly, then sprinkle cinnamon sugar mixture on top.
  7. Form rolls: Roll dough tightly from long edge into a log. Cut into 12 slices about 1 ½ inches each. Place rolls cut side up in greased 9-inch pan.
  8. Second rise: Cover loosely and let rolls rise for 30-40 minutes until puffy but not doubled.
  9. Bake: Preheat oven to 350°F (175°C). Bake rolls for 25-28 minutes until golden brown. Tent with foil if browning too fast.
  10. Make glaze: Beat cream cheese, powdered sugar, milk, vanilla, and salt until smooth.
  11. Glaze and serve: Cool rolls for 10 minutes, drizzle glaze over warm rolls, and serve.

Notes

Ensure yeast is properly activated for fluffy rolls. Knead dough until tacky but not sticky. Let dough rise in a warm, draft-free spot. Cut rolls evenly for uniform baking. Glaze while rolls are warm for best results. Rolls can be refrigerated overnight after first rise or frozen before baking.
