  • 2 cups smoked chicken, shredded (or rotisserie chicken with 1 teaspoon smoked paprika)
  • 24 mini tortilla rounds
  • 1 ½ cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup black beans, rinsed and drained
  • 2 jalapeños, thinly sliced
  • 3 green onions, chopped
  • A handful fresh cilantro, roughly chopped (optional)
  • Sour cream, for serving
  • 1 teaspoon smoked paprika (if using non-smoked chicken)
  • ½ teaspoon ground cumin
  • 1 tablespoon lime juice
  • Salt and pepper, to taste

Instructions

  1. Prepare the Chicken: If smoking chicken, preheat smoker to 225°F. Season 2 lbs chicken breasts or thighs with salt, pepper, smoked paprika, and cumin. Smoke for 1.5 to 2 hours until internal temperature reaches 165°F. Let rest, then shred finely. If using rotisserie chicken, shred and toss with smoked paprika and cumin.
  2. Preheat Oven: Set oven to 400°F. Line a baking sheet with parchment paper or silicone mat.
  3. Assemble the Nacho Rounds: Arrange 24 mini tortilla rounds in a single layer on the baking sheet. Evenly distribute smoked chicken over rounds, followed by black beans and jalapeño slices.
  4. Add Cheese: Sprinkle a blend of 1 ½ cups sharp cheddar and 1 cup Monterey Jack cheese over each round.
  5. Bake: Bake for 8 to 10 minutes until cheese is melted, bubbly, and slightly golden. Watch closely to avoid overbaking.
  6. Garnish and Serve: Remove from oven, sprinkle chopped green onions and cilantro on top. Squeeze lime juice over everything. Serve immediately with sour cream on the side.

Notes

If no smoker is available, use rotisserie chicken with smoked paprika. Assemble ahead and refrigerate up to 6 hours before baking, adding extra bake time if baking cold. Avoid microwaving leftovers to keep rounds crispy. For vegetarian version, substitute chicken with grilled portobello mushrooms or roasted cauliflower.
