These sliders combine smoky bacon, tangy BBQ chicken, and flaky buttermilk biscuits for an easy, crowd-pleasing game day snack that comes together in under 30 minutes.

Ingredients

Scale
  • 2 cups cooked chicken, shredded (rotisserie chicken recommended)
  • 1/2 cup BBQ sauce (Sweet Baby Ray’s Original preferred)
  • 6 slices thick-cut bacon, cooked until crispy and chopped
  • 12 buttermilk biscuits (homemade or refrigerated dough like Pillsbury flaky layers)
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup sliced pickles (optional)
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon smoked paprika (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Arrange bacon slices on a wire rack over a baking sheet and bake for 15-20 minutes until crispy. Remove and let cool, then chop into bite-sized pieces. Alternatively, cook bacon in a skillet over medium heat until crisp.
  2. In a large bowl, combine shredded chicken, BBQ sauce, and smoked paprika (if using). Toss until chicken is evenly coated, about 3-5 minutes.
  3. Preheat oven to 350°F (175°C) for baking the sliders.
  4. Slice biscuits in half horizontally. Place bottom halves in a 9×13-inch baking dish, slightly touching.
  5. Spread BBQ chicken mixture evenly over biscuit bottoms. Sprinkle chopped bacon and shredded cheddar cheese on top. Add sliced pickles if desired.
  6. Place biscuit tops over the filling. Brush tops with melted butter.
  7. Bake sliders for 15-18 minutes until biscuits are golden brown and cheese is melted and bubbly. Rotate pan halfway through baking if needed.
  8. Let sliders rest for 5 minutes before serving.

Notes

Use rotisserie chicken to save time and add flavor. Brush melted butter on biscuit tops for a golden crust. Oven-bake bacon on a rack to keep it crispy and drain excess fat. Rotate pan halfway through baking to ensure even browning. Thin BBQ sauce with water or apple cider vinegar if too thick. Sliders can be assembled ahead and refrigerated overnight before baking.
