  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 3/4 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons chopped fresh basil or parsley
  • 1 tablespoon freshly squeezed lemon juice
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Rinse shrimp under cold water and pat dry with paper towels. Set aside.
  2. In a large skillet over medium heat, melt 2 tablespoons butter with 1 tablespoon olive oil. Add minced garlic and chopped shallot. Sauté for about 2 minutes until fragrant and softened, but not browned.
  3. Stir in chopped sun-dried tomatoes and red pepper flakes. Cook for another minute.
  4. Push aromatics to the side and add shrimp in a single layer. Cook for 2 minutes on one side until pink and slightly golden. Flip and cook for another 1-2 minutes until opaque. Remove shrimp to a plate.
  5. Lower heat to medium-low. Pour in heavy cream and stir, scraping up browned bits. Let simmer gently for 3-4 minutes until slightly thickened.
  6. Stir in grated Parmesan, remaining 2 tablespoons butter, and lemon juice. Season with salt and pepper. Stir until butter melts and sauce is smooth. Add splash of cream or water if too thick.
  7. Return shrimp to the pan and toss gently to coat. Cook for another minute to warm through.
  8. Sprinkle chopped fresh herbs over the dish, toss gently, and remove from heat.
  9. Serve immediately over pasta, rice, or with crusty bread.

Notes

Do not overcook shrimp to avoid rubbery texture. Use fresh garlic and shallots for best flavor. The olive oil raises the smoke point of butter to prevent burning. Simmer sauce gently to avoid curdling. Grate Parmesan fresh for better melting. Adjust sauce thickness with cream or water as needed. Leftovers keep well for 2 days refrigerated; reheat gently with added cream or milk.
