  • ½ cup almond flour (finely ground)
  • ¼ cup pork rind crumbs, crushed finely (or extra almond flour if unavailable)
  • 2 large eggs, beaten, room temperature
  • ½ cup buffalo sauce
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper
  • For the Creamy Ranch Dip:
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon dried dill
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • 12 tablespoons water or unsweetened almond milk to thin as needed

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and thoroughly dry cauliflower; cut into uniform bite-sized florets.
  3. In a large bowl, combine almond flour, crushed pork rind crumbs, garlic powder, onion powder, smoked paprika, salt, and black pepper; mix well.
  4. In another bowl, whisk eggs until smooth.
  5. Dip each cauliflower floret into beaten eggs, letting excess drip off, then roll in dry coating mix, pressing gently to adhere.
  6. Arrange coated florets in a single layer on the prepared baking sheet, leaving space between pieces.
  7. Bake for 20 minutes, flipping florets halfway through to brown evenly.
  8. Transfer baked cauliflower to a large bowl; toss with buffalo sauce to coat evenly.
  9. Return coated florets to baking sheet and bake an additional 5-7 minutes to set sauce.
  10. While baking, whisk together mayonnaise, sour cream, chives, dried dill, garlic powder, onion powder, salt, pepper, and water or almond milk until desired consistency for ranch dip.
  11. Let bites cool slightly and serve warm with creamy ranch dip.

Dry cauliflower thoroughly before coating to ensure crispiness. Flip bites halfway through baking to avoid sogginess. Use parchment or silicone liner to prevent sticking.
