Instructions

  1. Measure 6 cups (180g) of cereal loops into a large mixing bowl. Pour 1/4 cup (57g) melted unsalted butter over the cereal. Gently fold with a spatula until all loops are lightly coated.
  2. In a medium bowl, combine 3 cups (360g) powdered sugar with 1 teaspoon vanilla extract and 1/2 teaspoon almond extract. Add 2 tablespoons (30ml) milk or cream to start. Beat with an electric mixer on medium speed until smooth and fluffy, about 3-4 minutes. Add more milk by teaspoons if too thick.
  3. Divide the frosting evenly into 5 small bowls. Tint each bowl with a different natural food color: red, blue, yellow, green, and purple. Stir until uniform.
  4. Working quickly, spoon or pipe small dollops of each colored frosting onto the cereal loops arranged on a parchment-lined baking sheet, creating a swirling rainbow effect.
  5. Let the frosted loops sit at room temperature for at least 30 minutes to allow the frosting to firm up slightly.
  6. Once set, gently transfer the loops to a serving bowl or airtight container. Serve or store as desired.
