A bold and easy-to-assemble layered nacho tower featuring smoky brisket, melty cheeses, and zesty jalapeño crema, perfect for parties and game days.

  • 34 lbs smoked beef brisket, sliced thin
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 12 oz sturdy tortilla chips
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup sour cream or Greek yogurt
  • 12 jalapeños, seeded and finely chopped
  • 1 tbsp lime juice
  • Salt to taste
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels (fresh or thawed frozen)
  • 2 green onions, thinly sliced
  • ½ cup diced tomatoes
  • Fresh cilantro leaves for garnish
  • Pickled jalapeños (optional)
  • Avocado slices or guacamole (optional)
  • Crumbled queso fresco or feta cheese (optional)

Instructions

  1. Slice smoked brisket into thin, bite-sized pieces (about ¼ inch thick). Toss with smoked paprika, garlic powder, onion powder, salt, and pepper.
  2. In a small bowl, combine sour cream, finely chopped jalapeños, lime juice, and a pinch of salt. Stir well and refrigerate until ready to use.
  3. On a large baking sheet, spread about one-third of the tortilla chips evenly.
  4. Sprinkle a mix of cheddar and Monterey Jack cheese over the chips, then scatter some brisket pieces on top.
  5. Add a handful of black beans and corn kernels over the brisket. Top with diced tomatoes and green onions.
  6. Repeat layering two more times, ending with a generous layer of cheese on top.
  7. Preheat oven to 375°F (190°C). Bake the nacho towers for 10-12 minutes until cheese is melted and bubbly.
  8. Remove from oven and immediately drizzle jalapeño crema over the top.
  9. Garnish with fresh cilantro leaves, pickled jalapeños if using, and optional avocado slices or crumbled cheese.
  10. Serve warm.

Notes

Prep brisket and jalapeño crema a day ahead to save time. Use sturdy chips to avoid sogginess. Layer cheese under chips to create a moisture barrier. For vegan or vegetarian versions, substitute brisket with beans or jackfruit and use dairy-free cheese and sour cream.
