  • 1/2 cup sparkling water or club soda
  • 1 tablespoon granulated sugar (adjust to taste)
  • 1 teaspoon fresh lemon juice
  • 1 cup heavy cream or full-fat coconut cream (for dairy-free option)
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (fresh or frozen)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon lemon zest (optional)
  • Fresh mint leaves (for garnish)
  • Edible flowers (optional, for garnish)

Instructions

  1. Prepare the Berry Compote: In a small saucepan, combine mixed berries, honey or maple syrup, and lemon zest. Cook over medium heat, stirring occasionally, until berries break down and mixture thickens slightly (about 7-8 minutes). Remove from heat and let cool. Strain through a fine mesh if a smoother texture is desired.
  2. Whip the Cream: In a chilled mixing bowl, combine heavy cream or coconut cream with powdered sugar and vanilla extract. Whisk with an electric mixer or hand whisk until soft peaks form. Avoid over-whipping.
  3. Mix the Rosé Fizz Layer: In a medium bowl, stir together chilled rosé, sparkling water, granulated sugar, and fresh lemon juice until sugar dissolves. Adjust sugar or lemon juice to taste.
  4. Assemble the Dessert Jars: Spoon about 2 tablespoons of berry compote into the bottom of each glass jar. Add about 3 tablespoons of whipped cream on top. Gently pour or spoon the rosé fizz mixture over the cream, filling the jars but leaving some room to avoid spills.
  5. Garnish and Chill (optional): Decorate each jar with a fresh mint leaf and edible flower if desired. Chill jars in the refrigerator for 15-20 minutes before serving to let flavors meld and fizz settle.
  6. Serve: Remove from fridge just before serving. Stir gently if desired or enjoy the distinct layers as is.

Chill all liquids beforehand to keep fizz longer. Whip cream to soft peaks to avoid grainy texture. Simmer berries gently to avoid watery compote. Pour rosé fizz slowly over a spoon to maintain layers and fizz. Adjust sweetness gradually. Prepare components ahead but assemble just before serving for best fizz.
