A quick and easy recipe for stunning chocolate covered strawberries that combine fresh fruit with smooth, glossy chocolate for an indulgent yet light treat perfect for any occasion.

Ingredients

Scale
  • 1 pound (450 g) fresh strawberries, medium to large size, stems intact
  • 8 ounces (225 g) semi-sweet or dark chocolate chips or bars, chopped finely
  • 2 ounces (60 g) white chocolate (optional, for drizzling)
  • 1 teaspoon (5 ml) vegetable oil or coconut oil (optional, for thinning chocolate and glossy finish)
  • Pinch of sea salt flakes (optional, for sprinkling)

Instructions

  1. Wash and dry strawberries thoroughly to remove all moisture (about 10 minutes).
  2. Line a baking sheet with parchment paper or a silicone baking mat.
  3. Chop the semi-sweet or dark chocolate finely. Set up a double boiler by simmering water in a pot and placing a heatproof bowl on top without touching the water.
  4. Add the chopped chocolate and 1 teaspoon of vegetable or coconut oil to the bowl. Stir gently until melted and silky smooth (about 5-7 minutes).
  5. Hold each strawberry by the stem and dip it into the melted chocolate, swirling to coat about 3/4 of the berry. Let excess chocolate drip back into the bowl.
  6. Place the dipped strawberry on the lined baking sheet. Repeat for all berries (plan for 15-20 minutes depending on batch size).
  7. Optional: Melt white chocolate using the same method or microwave in short bursts, stirring often. Drizzle thin lines over the chocolate-covered strawberries using a spoon or fork (about 5 minutes).
  8. Let the chocolate set by leaving strawberries at room temperature for about 30 minutes or refrigerate for 10-15 minutes to firm up the coating.
  9. Optional: Sprinkle a pinch of sea salt flakes on the chocolate just before it sets for a subtle salty contrast.

Notes

Dry strawberries thoroughly to prevent chocolate from seizing. Use gentle heat to melt chocolate to avoid burning. Adding a teaspoon of oil helps achieve a smooth, glossy finish. Let chocolate set at room temperature to avoid condensation. Reheat chocolate gently if it thickens during dipping. Store in a single layer in an airtight container lined with parchment paper and refrigerate up to 48 hours for best freshness.
