A quick and easy sheet pan fajita chicken recipe perfect for healthy meal prep, featuring juicy chicken breasts and colorful bell peppers roasted with smoky spices.

Ingredients

Scale
  • 1 lb boneless skinless chicken breasts, sliced into thin strips
  • 3 bell peppers (red, yellow, green), sliced into strips
  • 1 yellow onion, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt, or to taste
  • ½ teaspoon freshly ground black pepper
  • Juice of 1 fresh lime (optional)
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the chicken breasts into thin strips, about ½-inch thick, keeping them uniform for even cooking.
  3. Core and seed the bell peppers, then slice into strips similar in size to the chicken. Peel and thinly slice the yellow onion.
  4. In a large mixing bowl, combine olive oil, garlic powder, smoked paprika, cumin, chili powder, salt, and black pepper. Whisk or stir well to blend the spices into the oil.
  5. Add the chicken and veggies to the bowl. Toss everything together until the chicken strips and vegetables are evenly coated with the spice mixture.
  6. Line your sheet pan with parchment paper or lightly grease it. Spread the chicken and vegetables out in a single layer, avoiding crowding.
  7. Place the sheet pan in the oven and roast for 20-25 minutes, stirring once halfway through. The chicken should reach an internal temperature of 165°F (74°C), and the veggies will be tender and slightly caramelized.
  8. Remove from oven and squeeze fresh lime juice over the top. Toss gently to combine and sprinkle with chopped cilantro if using.
  9. Serve immediately or let cool for meal prep containers.

Notes

If chicken browns too fast but veggies aren’t done, loosely cover pan with foil and continue roasting. For juicier chicken, boneless skinless thighs can be used instead of breasts. Avoid overcrowding the pan to ensure proper roasting. Fresh lime juice added after cooking brightens the flavors. Use parchment paper for easier cleanup.
