  • 2 small boneless, skin-on chicken breasts (about 10 oz / 280g total)
  • ½ cup all-purpose flour (60g)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 3 tablespoons fresh lemon juice (from 1 large lemon)
  • ½ cup chicken broth (120ml), low-sodium preferred
  • 2 tablespoons capers, rinsed
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Pat the chicken breasts dry with paper towels. Slice each breast horizontally to create two thinner cutlets (about ¾ inch / 2 cm thick). Season both sides generously with salt and pepper.
  2. Place the flour in a shallow bowl. Lightly coat each chicken cutlet in flour, shaking off excess.
  3. Heat a large skillet over medium-high heat and add the olive oil. When the oil shimmers, place the chicken cutlets skin-side down in the skillet.
  4. Cook for 4-5 minutes without moving to crisp the skin. Flip and cook the other side for 3-4 minutes until golden and cooked through (internal temperature 165°F / 74°C). Remove chicken to a plate and tent with foil to keep warm.
  5. Lower heat to medium. Add butter and minced garlic to the skillet and sauté for about 30 seconds until fragrant but not browned.
  6. Pour in chicken broth and lemon juice, stirring to scrape up browned bits. Let the sauce simmer for 3-4 minutes to reduce slightly.
  7. Stir in rinsed capers and chopped parsley. Taste and adjust seasoning with salt or more lemon juice if desired.
  8. Return chicken to the pan and spoon sauce over each piece. Warm in the sauce for 1-2 minutes. Serve immediately with extra sauce.

Pat chicken dry to ensure crispy skin. Do not crowd the pan; cook in batches if needed. Use fresh lemon juice for best flavor. If chicken browns too fast, lower heat. Avoid over-reducing sauce to prevent saltiness. Reheat leftovers gently in a skillet with a splash of broth or lemon juice to maintain crispiness.
