  • 1/3 cup honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups Rice Krispies cereal
  • Optional: 1/4 cup mini chocolate chips or chopped nuts

Instructions

  1. In a mixing bowl, combine 1 cup of creamy peanut butter with 1/3 cup honey and 1 teaspoon vanilla extract. Stir until smooth and well blended.
  2. Sprinkle in 1/4 teaspoon salt and mix again to balance the sweetness.
  3. Gently fold in 2 cups of Rice Krispies cereal, being careful not to crush the cereal.
  4. If using, fold in 1/4 cup mini chocolate chips or chopped nuts.
  5. Chill the mixture in the refrigerator for about 10 minutes to firm up.
  6. Scoop out about 1 tablespoon of mixture and roll between your palms to form smooth balls. Arrange on a parchment-lined baking sheet or plate.
  7. Refrigerate the balls for at least 30 minutes to set completely.
  8. Serve chilled or at room temperature. Store in an airtight container in the fridge for up to one week.

Notes

If the mixture is too sticky to roll, refrigerate longer or lightly wet your hands. If too dry, add a teaspoon of honey and mix again. Use creamy peanut butter for best texture. Warm honey slightly if crystallized. Store in an airtight container with parchment paper between layers. Freeze for up to 3 months and thaw in fridge before serving.
