  • 2 ripe bananas, peeled and sliced lengthwise
  • 2 tablespoons unsalted butter, softened
  • 1/4 cup brown sugar, packed
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons dark rum
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: vanilla ice cream for serving

Instructions

  1. Peel and slice each banana lengthwise into halves or thirds.
  2. Place a non-stick skillet over medium heat and add 2 tablespoons of unsalted butter. Once melted, add 1/4 cup brown sugar and sprinkle in 1/4 teaspoon cinnamon. Stir gently until sugar dissolves and mixture becomes a smooth, bubbly caramel sauce.
  3. Carefully lay banana slices into the caramel sauce. Cook about 2 minutes on each side, spooning sauce over bananas as they soften. Reduce heat if bananas start to break apart.
  4. Remove pan from heat briefly, pour in 2 tablespoons dark rum, and return to heat to warm the alcohol. Ignite rum carefully with a long lighter or match to flambé. Alternatively, stir rum into sauce and simmer gently for 1-2 minutes.
  5. Stir in 1 teaspoon vanilla extract and a pinch of salt. Give a final gentle stir and remove from heat.
  6. Serve immediately over vanilla ice cream or enjoy on their own while warm.

Notes

Warm the rum before flambéing for a safer flame. Use ripe but firm bananas to avoid mushy texture. Control heat to prevent sugar burning. Add a splash of water or more butter if caramel hardens too quickly. Serve immediately for best texture.
