  • 1 no-boil lasagna noodle (about 6 inches long)
  • 1/4 cup whole milk ricotta cheese
  • 1/2 cup shredded mozzarella cheese (freshly shredded preferred)
  • 2 tablespoons grated Parmesan cheese
  • 1 large egg (room temperature)
  • 1/2 cup marinara sauce
  • 1/3 cup cooked and drained ground beef or Italian sausage (optional)
  • 1 teaspoon olive oil (for sautéing meat or veggies if using)
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon dried Italian herbs (basil, oregano, thyme blend)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small mixing bowl, combine 1/4 cup ricotta cheese, 1 large egg, garlic powder, dried Italian herbs, salt, and pepper. Stir until smooth and creamy.
  3. Heat 1 teaspoon olive oil in a skillet over medium heat. Add 1/3 cup ground beef or Italian sausage, breaking it up with a spoon. Cook until browned and no longer pink, about 5 minutes. Drain excess fat. Alternatively, sauté 1/3 cup mushrooms or spinach until tender, about 3-4 minutes for a vegetarian option.
  4. Lightly grease a 6-inch diameter oven-safe ramekin with olive oil or non-stick spray. Spread 2 tablespoons marinara sauce evenly on the bottom.
  5. Break the no-boil noodle in half to fit the dish and lay one half over the sauce.
  6. Spread half the ricotta mixture on top of the noodle.
  7. Sprinkle half the cooked meat or veggies over the ricotta.
  8. Add 1/4 cup shredded mozzarella and 1 tablespoon Parmesan cheese on top.
  9. Repeat layering with remaining sauce, noodle half, ricotta mixture, meat or veggies, and finish with remaining mozzarella and Parmesan cheese on top.
  10. Cover the ramekin loosely with aluminum foil and bake for 20 minutes.
  11. Remove the foil and bake for an additional 5-7 minutes until the cheese is bubbly and golden.
  12. Let the lasagna rest for 5 minutes before serving to allow layers to set.

Notes

If marinara sauce is watery, simmer it to thicken before assembling to prevent soggy noodles. Cover with foil during baking to avoid over-browning the cheese. Use no-boil noodles to save time and absorb sauce well. Start checking the bake around 22 minutes to avoid burning the cheese. For vegetarian, skip meat and add sautéed mushrooms or spinach. For gluten-free, use gluten-free no-boil noodles or thin zucchini slices. Dairy-free alternatives can be used but may alter texture.
