A comforting and budget-friendly crockpot chicken and stuffing recipe that is easy to prepare with simple pantry staples, perfect for cozy dinners and busy days.

Ingredients

Scale
  • 2 pounds bone-in, skin-on chicken thighs (can substitute with boneless, skinless or drumsticks)
  • 1 package (6 ounces) boxed stuffing mix (e.g., Pepperidge Farm Herb Seasoned Stuffing Mix)
  • 2 cups chicken broth (low-sodium preferred)
  • 4 tablespoons butter, melted
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • Salt and pepper to taste
  • Optional: 1/4 cup white wine

Instructions

  1. Pat the chicken thighs dry with paper towels. Season generously with salt, pepper, thyme, and sage on all sides. (5 minutes)
  2. In a skillet, melt 2 tablespoons of butter over medium heat. Add chopped onion and cook until softened and translucent, about 5 minutes. Add minced garlic and cook for 30 seconds until fragrant. (7 minutes)
  3. In a large bowl, combine the boxed stuffing mix, melted butter, chicken broth, and optional white wine. Toss until evenly moistened but not soggy. (3 minutes)
  4. Spread half of the stuffing mixture on the bottom of the slow cooker. Place the seasoned chicken thighs on top. Spoon the sautéed onion and garlic evenly over the chicken, then cover with the remaining stuffing. (5 minutes)
  5. Cover and cook on low for 6 hours. Avoid lifting the lid during cooking.
  6. Before serving, check that the chicken’s internal temperature is at least 165°F. If stuffing is too moist, switch crockpot to high uncovered for 15-20 minutes to crisp the top. (5 minutes)
  7. Optional: Broil cooked chicken thighs in the oven for 2-3 minutes for extra crispy skin.

Notes

Drying the chicken before seasoning helps avoid sogginess. Resist stirring after layering to allow juices to infuse the stuffing. For extra crispy skin, broil chicken after slow cooking. If crockpot runs hot, check doneness earlier to prevent overcooking. Can substitute chicken thighs with breasts or drumsticks. Use gluten-free stuffing mix and olive oil for gluten- and dairy-free versions.
