Delicious Dutch Process Cocoa Brownies

These fudgy brownies use Dutch process cocoa powder for a smoother, less acidic chocolate flavor and a velvety texture. Perfect for a quick, comforting chocolate treat.

  • 1 cup (227g) unsalted butter, melted
  • 2 cups (400g) granulated sugar
  • 4 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 3/4 cup (75g) Dutch process cocoa powder
  • 1 cup (125g) all-purpose flour, sifted
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • Optional: 1/2 cup (90g) chocolate chips or chunks
  • Optional: 1/2 cup (50g) chopped nuts (walnuts or pecans)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking pan or line it with parchment paper, leaving some overhang for easy removal.
  2. Melt the butter gently in a microwave-safe bowl or on the stovetop. Let it cool slightly so it’s warm but not hot.
  3. Combine sugar and melted butter in a large bowl. Whisk until smooth and glossy, about 1-2 minutes.
  4. Add the eggs one at a time, whisking well after each addition.
  5. Stir in vanilla extract.
  6. In a separate bowl, sift together Dutch process cocoa powder, flour, salt, and baking powder.
  7. Gradually fold the dry ingredients into the wet mixture using a spatula. Stop when no streaks of flour remain.
  8. If using, fold in chocolate chips or nuts.
  9. Pour the batter into the prepared pan and spread evenly with a spatula.
  10. Bake for 25-30 minutes. Check at 25 minutes by inserting a toothpick in the center; it should come out with moist crumbs, not wet batter.
  11. Cool the brownies completely on a wire rack before slicing.

Notes

Do not overbake to keep brownies fudgy; use the toothpick test to check doneness. Let brownies cool completely before slicing for cleaner cuts. For vegan version, substitute eggs with flax eggs and butter with vegan butter or coconut oil. For gluten-free, replace flour with almond flour or gluten-free blend.
