  • 6 tablespoons unsalted butter (85 g), melted and cooled
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring (gel type)
  • 1 cup fresh blueberries (150 g), gently washed and patted dry
  • 4 ounces cream cheese (115 g), softened
  • 1 cup powdered sugar (120 g), sifted
  • 2 tablespoons milk (30 ml), adjust for desired consistency
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your mini donut pan with butter or non-stick spray.
  2. In a large bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt. Whisk to combine.
  3. In a separate bowl, whisk together sugar, buttermilk, melted butter, eggs, vanilla extract, and red food coloring until smooth and vibrant.
  4. Slowly pour wet ingredients into dry ingredients, stirring gently just until combined. Avoid overmixing.
  5. Gently fold in fresh blueberries, being careful not to crush them.
  6. Spoon batter into each donut pan cavity, filling about ¾ full.
  7. Bake for 12-15 minutes until edges pull away slightly and a toothpick comes out clean or with a few moist crumbs.
  8. Cool donut bites in the pan for 5 minutes, then transfer to a cooling rack to cool completely.
  9. Prepare glaze by beating softened cream cheese until smooth. Gradually add powdered sugar, milk, and vanilla extract. Beat until creamy and smooth.
  10. Dip or drizzle glaze over cooled donut bites. Let glaze set for 10-15 minutes before serving.

Notes

Use room temperature ingredients for better batter mixing. Avoid overmixing to keep donut bites tender. Let donut bites cool completely before glazing to prevent melting. If glaze is too thick, add more milk; if too thin, add more powdered sugar. Mini muffin pan can be used as an alternative to mini donut pan with adjusted bake time.
