  • 1 cup freeze-dried strawberries, crushed
  • 1/2 cup fresh strawberries, diced
  • 2 tablespoons strawberry jam or preserves
  • 1 cup dark chocolate chips or chunks (for dipping)
  • 1 teaspoon coconut oil or vegetable oil

Instructions

  1. Lightly grease a 9×13-inch pan or line it with parchment paper with overhang for easy removal.
  2. In a medium saucepan over medium heat, melt 1 cup unsalted butter.
  3. Stir in 1 1/3 cups granulated sugar, 1 cup packed light brown sugar, and 1/4 cup whole milk; stir constantly until mixture just starts to boil (about 5 minutes).
  4. Reduce heat to low and simmer for 2 minutes while stirring to dissolve sugars completely.
  5. Remove from heat and stir in 1 teaspoon vanilla extract.
  6. Fold in 3 cups quick-cooking oats until evenly coated and mixture is thick and sticky.
  7. Gently fold in 1 cup crushed freeze-dried strawberries, 1/2 cup diced fresh strawberries, and 2 tablespoons strawberry jam.
  8. Press the mixture firmly and evenly into the prepared pan using a spatula or clean hands.
  9. Refrigerate for at least 2 hours or until firm (or 1 hour in the freezer, watching closely).
  10. In a microwave-safe bowl, combine 1 cup dark chocolate chips and 1 teaspoon coconut oil; microwave in 20-second intervals, stirring until smooth and glossy, or melt using a double boiler.
  11. Lift fudge slab from pan using parchment overhang and cut into 2×2 inch bars.
  12. Dip each bar halfway into melted chocolate and place on parchment paper to set.
  13. Let chocolate harden at room temperature or in the fridge for about 15 minutes before serving.
  14. Store leftovers in an airtight container in the refrigerator.
