Decadent Chocolate Covered Strawberry Fudge

A rich and creamy chocolate fudge with fresh strawberry pieces, coated in a glossy chocolate shell. Perfect for any occasion and easy to make in under 30 minutes.

  • 2 cups (340g) semi-sweet chocolate chips
  • 1 can (14 oz / 396g) sweetened condensed milk
  • 1/4 cup (56g) unsalted butter, softened
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh strawberries, diced small
  • 1 tablespoon granulated sugar
  • 1 cup (170g) dark chocolate chips or melting wafers
  • 1 teaspoon coconut oil or vegetable oil

Instructions

  1. In a small bowl, toss the diced fresh strawberries with 1 tablespoon of granulated sugar. Let them sit for about 10 minutes to macerate.
  2. In a microwave-safe bowl, combine 2 cups semi-sweet chocolate chips and 1/4 cup softened butter. Microwave in 20-second bursts, stirring each time, until smooth and fully melted (about 1-2 minutes total). Alternatively, use a double boiler over simmering water, stirring until silky smooth.
  3. Stir in the entire can of sweetened condensed milk and 1 teaspoon vanilla extract into the melted chocolate mixture. Mix until fully combined and glossy.
  4. Drain any excess juice from the macerated strawberries, then gently fold the berries into the chocolate mixture.
  5. Pour the fudge mixture into a lined 8×8 inch (20×20 cm) pan, spreading evenly with a spatula. Refrigerate for about 2 hours, or until firm.
  6. Melt 1 cup dark chocolate chips with 1 teaspoon coconut oil in the microwave or double boiler, stirring until smooth and glossy.
  7. Cut the set fudge into bite-sized squares. Dip each piece into the melted chocolate coating, letting excess drip off before placing on parchment paper. Chill again until the chocolate hardens, about 30 minutes.
  8. Bring the fudge to room temperature for 10 minutes before serving.

Notes

Use fresh strawberries for best texture; macerate strawberries to avoid soggy fudge. Melt chocolate slowly to prevent burning. Line pan with parchment paper extending over edges for easy removal. Chill fudge thoroughly for best texture. Rewarm chocolate coating gently if it thickens during dipping. Store fudge in airtight container in fridge up to 1 week or freeze up to 3 months.
