  • 1 pound (450g) fresh strawberries, washed and dried thoroughly
  • 1 cup (240ml) heavy cream, cold for whipping
  • 1/4 cup (30g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 8 ounces (225g) dark chocolate, high-quality baking chocolate or couverture
  • Optional: pinch of sea salt to sprinkle over the chocolate

Instructions

  1. Rinse and dry about 1 pound (450g) of fresh strawberries thoroughly. Set aside on a parchment-lined baking sheet.
  2. Pour 1 cup (240ml) of cold heavy cream into a chilled mixing bowl. Add 1/4 cup (30g) powdered sugar and 1 teaspoon vanilla extract. Beat the cream on medium-high speed until soft peaks form, about 3-5 minutes.
  3. Gently fold about half of the chopped strawberries into the whipped cream using a spatula.
  4. Chop 8 ounces (225g) of dark chocolate into small pieces. Melt the chocolate using a double boiler or microwave in 20-second bursts until smooth and glossy. Let cool slightly but keep fluid.
  5. Scoop dollops of the whipped strawberry cream onto the parchment-lined baking sheet. Freeze for 15-20 minutes to firm up.
  6. Hold each whole strawberry by the stem and dip it halfway into the melted chocolate. Place back on parchment to set. Optionally sprinkle with sea salt before chocolate hardens.
  7. Quickly dip the firm cream dollops into the chocolate, letting excess drip off. Return to parchment to set completely.
  8. Refrigerate the assembled chocolate-covered strawberry cream clouds for at least 30 minutes before serving.

Chill your bowl and beaters before whipping cream to keep it stable. Melt chocolate gently in short bursts to avoid burning. Dry strawberries thoroughly before dipping to prevent chocolate seizing. Freeze cream dollops before dipping to maintain shape. Work quickly during dipping to avoid melting the cream.
