  • 1 pound ground beef (80/20 lean-to-fat ratio preferred)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup canned crushed tomatoes
  • 1/2 cup canned kidney beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Optional toppings: 2 green onions, thinly sliced; jalapeño slices; sour cream or ranch dressing

Instructions

  1. Peel and cut the russet potatoes into thick fries about 1/2-inch wide. Soak them in cold water for at least 30 minutes to remove excess starch.
  2. While the fries soak, heat a large skillet over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat if needed.
  3. Add chopped onion and garlic to the beef and sauté until softened, about 3 minutes.
  4. Add crushed tomatoes, kidney beans, chili powder, cumin, smoked paprika, salt, and pepper. Stir and reduce heat to low. Simmer uncovered for 15 minutes, stirring occasionally.
  5. Drain the soaked fries and pat dry thoroughly. Toss fries with vegetable oil, salt, and pepper until evenly coated. Spread in a single layer on a rimmed baking sheet.
  6. Preheat oven to 425°F (220°C). Bake fries for 15 minutes, flip, then bake another 15-20 minutes until golden and crispy.
  7. Assemble the triple layers: layer half the fries on a baking sheet, spoon half the chili over them, sprinkle half the shredded cheese. Repeat for second and third layers.
  8. Return assembled fries to oven or broiler for 5-7 minutes until cheese is melted and bubbly. Watch closely to avoid burning.
  9. Remove from oven and garnish with green onions, jalapeño slices, and dollops of sour cream or ranch if desired. Serve immediately.
