Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and dice 4 medium russet potatoes into ½-inch cubes. Rinse them in cold water to remove excess starch, then pat dry thoroughly with a clean kitchen towel.
  3. In a large bowl, combine the diced potatoes with 2 tablespoons olive oil, 2 tablespoons melted butter, ½ teaspoon garlic powder, and salt and pepper to taste. Mix well to coat evenly.
  4. Line a baking sheet with parchment paper or a silicone baking mat. Spread the potatoes out in a single layer, ensuring enough space between pieces.
  5. Bake the potatoes for 25-30 minutes, flipping halfway through, until golden and crispy. Watch closely to avoid burning.
  6. While potatoes bake, combine 2 cups cooked shredded chicken, 2 tablespoons ranch seasoning, 1 cup shredded cheddar cheese, and 2 sliced green onions in a bowl. Mix well.
  7. Remove potatoes from oven. Using a spoon, create a small well or mound on each potato cube and spoon a generous amount of the ranch chicken mixture on top.
  8. Return to oven and bake for an additional 8-10 minutes at 425°F (220°C), until cheese is melted and bubbly.
  9. Remove from oven and let cool slightly. Dollop sour cream on top of each bite and sprinkle with fresh parsley.
