  • 1/2 teaspoon onion powder
  • 1 cup whole milk (or almond milk for dairy-free)
  • 2 large eggs, room temperature
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup blue cheese crumbles or shredded cheddar (optional)
  • 2 tablespoons chopped green onions

Instructions

  1. Shred about 2 cups of cooked chicken using forks or your hands. Toss it with 1/2 cup buffalo sauce in a medium bowl. Set aside to marinate for about 10 minutes.
  2. In a large bowl, whisk together 1 1/2 cups all-purpose flour, 1 tablespoon baking powder, 1 teaspoon salt, 1 teaspoon garlic powder, and 1/2 teaspoon onion powder.
  3. In another bowl, beat 2 large eggs until frothy. Add 1 cup milk and 2 tablespoons melted unsalted butter, mixing well.
  4. Slowly pour wet ingredients into dry ingredients, stirring gently to combine. Do not overmix; lumps are okay. Fold in the buffalo chicken mixture, optional 1/2 cup cheese, and 2 tablespoons chopped green onions.
  5. Preheat the waffle iron and lightly grease the plates with cooking spray or brush with oil.
  6. Spoon about 2 tablespoons of batter per waffle pocket or mini waffle mold. Close the iron and cook for 3-5 minutes until golden brown and crispy. Avoid opening too early.
  7. Transfer cooked bites to a wire rack to cool and stay crispy. Serve warm with ranch or blue cheese dressing for dipping.
