  • 2 cups (200g) shredded sharp cheddar and Monterey Jack cheese blend
  • 1 pound (450g) ground beef or turkey
  • 2 tablespoons olive oil, divided
  • 2 tablespoons taco seasoning
  • 1/4 cup (60ml) water
  • 1 cup (240ml) black beans, rinsed and drained
  • 1 cup (150g) diced tomatoes, fresh or canned
  • 3 green onions, sliced thin
  • 12 jalapeños, sliced thin (optional)
  • Sour cream, for serving
  • Fresh cilantro, a handful chopped, for garnish
  • Avocado or guacamole, for topping (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat 1 tablespoon olive oil in a skillet over medium heat. Add ground beef or turkey and brown, breaking it apart with a spatula, about 6-8 minutes. Drain excess fat.
  3. Stir in taco seasoning and water. Simmer for 2 minutes until thickened. Set aside.
  4. Rinse and drain black beans. Dice tomatoes and slice green onions and jalapeños thinly.
  5. Line a large rimmed sheet pan with parchment paper.
  6. Spread a single, even layer of tortilla chips across the pan.
  7. Evenly distribute the cooked meat, black beans, diced tomatoes, green onions, and jalapeños over the chips.
  8. Sprinkle shredded cheese evenly on top.
  9. Bake for 8-12 minutes until cheese melts and bubbles with golden spots.
  10. Remove from oven and garnish with chopped cilantro, dollops of sour cream, and avocado or guacamole if using.
  11. Serve immediately for maximum crispiness.
