  • 1/2 cup finely grated Parmesan cheese (Parmigiano-Reggiano recommended)
  • 3 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon kosher or sea salt
  • 1/4 teaspoon freshly ground black pepper
  • Lemon zest from 1/2 lemon (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Trim the asparagus by snapping or cutting off the woody ends, about 1 to 2 inches from the bottom.
  3. In a mixing bowl, combine the asparagus with olive oil, minced garlic, salt, and black pepper. Toss until evenly coated.
  4. Spread the asparagus in a single layer on a lined baking sheet, keeping them spaced out to avoid steaming.
  5. Roast for 10 minutes.
  6. Remove the pan and sprinkle the grated Parmesan evenly over the asparagus.
  7. Return to the oven and roast for another 5-7 minutes until the cheese is golden and crispy.
  8. Optionally, sprinkle lemon zest over the asparagus immediately after removing from the oven.
  9. Serve immediately while crispy.

Notes

Do not overcrowd the pan to avoid steaming. Use finely grated Parmesan to ensure even crisping and prevent burning. Add Parmesan halfway through roasting. Keep an eye on the cheese during the last few minutes to avoid burning. Toss asparagus mid-roast for even crispiness. Reheat leftovers in a hot oven or toaster oven to maintain crispness; avoid microwaving.
